For those of you really wanting to kick the carb habit and need something delish to serve at a luncheon or just to the family, try these;

ROAST TURKEY ROLL UPS

1/2 cup baby spinach
1/2 pound lean, roasted turkey breast, sliced
2 tbsp. mayonnaise made with olive or soybean oil
2 cups alfalfa sprouts
1 tsp. orange bell pepper, cHopped fine
3 chives for garnish, optional

Place the turkey slices on a plate...
Spread turkey with mayonnaise...
Top with baby spinach and sprouts...
Roll up and divide between plates...
Garnish with pepper bits and chives...
Makes two servings [Wink]

Yum...this sounds delicious. I might use oil and vinegar instead of mayo.

I'm bringing this back to knock out the chocolate, its over ladies, eat no more chocolate hah, fat chance!!!

Anyhow try these delicious turkey roll ups, low fat, carbs, calories and very tasty....also economical. [Wink]

No matter how hard I try someone keeps coming back to Chocolate....now ladies July 7th was chocolate day and it has passed. It is once again time to eat sensibly, not diet, but eat sensibly....(you can always sneak the chocolate in a plain brown bag)... [Big Grin]

Mea culpa, dear Chatty. I think it's my fault the chocolate thread came back up. (rustle, rustle...deep sigh of profound pleasure). Turkey roll-ups, yes, of course I'm drooling over the turkey roll-ups.

Seriously, Chatty, this recipe looks great...hubby's working all month, so I'm doing all the meals these days. Big change for me, since he started doing most of the cooking while I was working full-time and just never stopped. So I'm having fun coming up with interesting and healthy menu choices. This with a salad (and he likes soup, even in summer) should make a great meal one night this week.

Eagle Heart, well I have to agree with your hubby, I am a soup nut and eat it all the time. I bought the Magic Bullet they advertise on TV and now make all my own fresh soups and its so fast and easy and so healthy without all that salt....of phooey now I'm hungry and its 4:55 AM but its to bed for me.... [Eek!]
