Being as I am originally from Wisconsin, I absolutely LOVE good cheese. Good cheese. So though I've heard many say that the best grilled cheese sandwiches are made with that processed cheese that comes in a box and is wrapped in foil, I cannot agree.

I use real cheese in my grilled cheese sandwiches, and I am always up for trying a new grilled cheese recipe. Yesterday I saw an article in the Des Moines Register about a restaurant that is dedicated to bacon, and noted that they had some bacon enhanced grilled cheese sandwiches on their menu.

But today I found this article about grilled cheese sandwiches and soup pairs so I finally decided to post something about grilled cheese -- since it seems to be following me everywhere...

I like adding things in with my basic sharp cheddar grilled cheese sandwiches -- Granny Smith apples might be my next adventure.

So any fellow grilled cheese fans here? What's your favorite grilled cheese recipe? Do you prefer the cheese be loaded onto basic white bread? Or are you into specialty breads like marble rye? Or maybe oat bread?

OMG!! I told you weird grilled cheese sandwiches have been popping up all over my email this week. Here's the latest!

And no I am not going to try making this monster. I am categorically against hot dogs - and don't even get me started on corn dogs. My husband loves them, and about once a year I cave and let him add a box to the grocery list. (It saves on hearing the whining!) Of course, he then has to eat them totally by himself.

But this hot mess not only has grilled cheese and corn dogs as ingredients, it's also coated with Doritos crumbs.

Sounds like Superbowl food. Enough said!

Oh but it wasn't enough! I went WAAAY BACK and looked at the original post which is courtesy of some guy called the Vulgar Chef. I wanted to advise you not to do as I did. The guy IS a master of vulgarity. And words we do not say here...

So please be warned.

I tend to like a sandwich that's closer to a pannini where there's a brie cheese or provolone, not just cheddar with prosciutto, etc. with it and the whole thing is flattened-heated for a few min. I've had artichoke spread, sometimes sauerkraut, etc.

It's been decades since I've had just a plain ordinary grilled cheddar cheese sandwich with white bread. Probably when I was in my early 20's.

I agree Orchid, that's there's something important about the flattening process. I make my grilled cheeses in a George Foreman grill, so they are flattened. AND I prefer to add interesting additions, as you mentioned. Sun dried tomatoes, avocado slices, crisp bacon and a bit of sauteed onion or mushrooms. Multiple kinds of cheese. (NOT all at once!!!)

Who else has suggestions?

My favourite grilled cheese sandwich (and now I want one, LOL) starts with pumpernickel bread, I spread a very thin layer of honey (no butter) on the inside of each slice, then layer not-too-thin-not-too-thick pieces of jarlsberg cheese (not the pre-sliced, I buy the blocks and slice it myself because I find all slice cheese to be a bit too rubbery for my taste). Sometimes I've added fresh mozzarella as well for an extra treat, but usually just stick to the jarlsberg. Then I put the sandwich together, lightly butter the outside (real butter, not margarine) and grill it. I don't use our panini grill, but do like to flatten it with the spatula until all the cheese is melted and starting to ooze out the sides and the outside is a nice golden brown with a bit of crispiness.

In the past I've also added sliced grapes to grilled cheese sandwiches. I like the sound of the bacon, but would probably just have it on the side. I'm not so fond of mixing the nice gooeyness of the cheese with the crunch of the bacon, though as I'm writing this, my mouth is watering at the thought of mixing those flavours together, LOL.

I have long banned white flour breads from my diet, but those fresh croissants in Paris were impossible to resist. But normally we don't bring any white bread into the house. The more grains and heartiness to the bread, the better to my taste.

And now I'm really hungry for one of these grilled cheese sandwiches!!
